Yum! for Little One! merges with Yum! Yum! Yum!

Dear Readers,

As it is becoming hectic to manage a separate blog for little ones, I will be working on merging the Yum! for Little One! with Yum! Yum! Yum! in the upcoming  days. With this you can conveniently browse all the Big People and Little One's recipes under one roof and subscribe for RSS Feed updates and become a Fan for Yum! Yum! Yum! on Facebook not to miss any updates.

Hope you are going like this idea and it gives me some more time as it will be easy to manage both blogs under one name and better suits for future growth plans for Yum! Yum! Yum!.

Potato Pancakes ( No Egg)

P for Potato, P for Pancakes and P for Penguine.. amma, when my little naughty daughter says that and walks like a penguin by keeping her hands on side and walking firm side -to- side pretending as if she is a little penguine, which makes us ( me and my son) laugh instantly at her little stunt. These days my son has little grown-up and accompanies me in cherishing all our little daughter's naughty stunts. Whenever she does things like these, both of us exchange the looks that 'Here She goes again.....', and that exact moment makes me realize the joy and pride in motherhood as i experience all these sweet nothings with my kids.  So, today let me share the 'not-that-sweet-pancakes', the pancakes made with potatoes recipe here. Enjoy!

Potato Pancakes

Ingredients:
Potato - 2
Onion - 1
salt - 1 tsp
black pepper - 1 tsp
Flour - 1 cup
Milk - 1/2 cup
Baking Powder - 1/4 tsp
Baking soda - 1/2 tsp

Method:
  1. Peel the Potatoes, Wash and Pat Dry them.
  2. Grate the Potatoes and Onions. Add salt and black pepper, baking powder and baking soda and mix well.
  3. Keep this aside for 10 minutes.
  4. Add Flour to this mixture, add milk little by little until it becomes a thick batter. Add some water as necessary.
  5. Heat the non-stick pan and pour a ladle of batter and spread it like a round. sprinkle oil around the pancakes.
  6. Once the bubble forms turn it to other side and let it cook on all sides evenly. 
  7. Repeat the steps and make pancakes until you finish with the batter. 
  8. Now layer 2 or 3 pancakes and spread the strawberry jam or nuttella or maple syrup  and sprinkle some powdered sugar. 

    Today I have served these with Nutella to my kiddo's.

Let your kiddo's dig into this healthy breakfast. They don't mind if you pack these for their lunch box as well.

Note:
  • I have avoided eggs, instead I have added baking soda for the quick fermentation and puffed pancakes.
  • You can use butter milk instead of milk for the same effect.
  • Or you can use egg, then don't use baking soda. 
  • This yields 12 to 15 small pancakes.
In the same batter I have added some left-over maggi masala to give that twist of spice for Big People.

Cabbage and Mixed Veg Stir Fry


Cabbage is one vegetable which tastes good in many forms, raw, stri-fry sauteed, pressure cooked. Oh, some thing is smelly now, Aha, the mention of the last form 'pressure cook'. Cabbage gives you some pungent smell when it gets pressure cooked. My mom used to make a fry by pressure cooking it and with the addition of fresh ground Ginger Chili paste  and grated coconut. It tastes superb, as long you can bear the smell while cooking it.  I took some hints from my mom's version but avoided pressure cooking. And, Today, I made a Cabbage and mixed veg stir fry, and surprisingly my kids loved this version. Here is the Recipe for you, Enjoy!

Cabbage Mixed-Veg Stir Fry

This is a very simple and less spicy version and goes very well with rice or rotis as well. Actually, I liked it with Rotis better than Rice. The color and crunch in this curry makes it unique and tastes very good with your soft chapati or roti or pulka. For your Little one you can roll this curry in Chapati and serve.

Ingredients:
Onion - 1 small
green chili - 3
Cabbage - 1 small
Green Beans - 1/2 cup (chopped)
Carrot - 1/2 cup (chopped)
Sweet Corn - 1/2  cup - frozen

oil - 1 Tbsp
ginger - 1 inch stick
garlic - 3 or 4 cloves
cumin seeds - 1 tsp
Turmeric Powder - 1 tsp
salt - 2 tsp
black pepper - 1 tsp
Curry leaves - 10
cilantro - 1/4 cup
Spring Onions - 1 Tbsp ( chopped)


Method:

  1. Chop the cabbage, onions, green chili  and set aside. Thaw the american sweet corn. 
  2. Boil 1 cup of water in the stock pot. add 1 tsp of salt.
  3. Add carrot and green beans once the water is boiling. After 5 min add the chopped cabbage and sweet corn. 
  4. let them cook for 5 min. And switch of the flame and drain the vegetables.
  5. Heat non-stick pan and add the oil. Once the oil is hot, Add the cumin seeds, followed by ginger, curry leaves, green chili, garlic, chopped onions.  Add turmeric powder and spring onions and saute for 2 to 3 min.
  6. Add the drained vegetables to the pan and mix them well. 
  7. Now add salt and black pepper and stir fry them on high for 2 min. Close the lid and cook on low for 2 min. 
  8. Add the Cilantro and mix the vegetables well and Turn off the heat. 


Transfer to serving bowl and serve with rice or roti.

Note:  

  • For this curry cutting the vegetables into very thin pieces is very important. 
  • Green chili and Ginger combination always enhances the flavor of cabbage.
  • If you want to make it spicy, you can add 1 tsp chili powder also, before simmering.

Potato, Beans and Baby Corn Stir Fry

I think Potato is the favorite vegetable for all the kids (and when we were the kids also). My son Abhi is fond of potato and baby corn. But he is little reluctant with the greens like, peas and green beans. So usually when ever i cook his favorite vegetable, I add very little of his not so favorite vegetable, so that he can not even notice. so today, I did the same magic to make him eat all those green beans which he is not fond of.

Potato, Green Beans, Baby Corn Stir Fry
If you want to give it a try, Here is recipe for very simple, but healthy stiry fry with the combination of Potato, Green Beans and Baby Corn. Enjoy!!!!

Ingredients:
Potato - 2 medium
Beans - 8 to 10
Baby Corn - 4 to 5 kernel
Garlic Cloves - 2
Cumin Seeds - 1 tsp
Mustard Seeds - 1 tsp
Turmeric Powder - 1 tsp
Salt - 1 tsp
Black Pepper - 1/2 tsp
Red Chili Powder - 1/4 tsp
Oil - 1 Tbsp
Cilantro - for garnish

Preparation:
  • Peal and chop the potatoes into small pieces
  • Take out the edges of the beans and cut them into very small pieces horizontally
  • Cut the Baby Corn Kernels also into very small pieces
  • Mince the Garlic Cloves

How to Make it:

  1. Heat the Oil in the non stick pan, and add Cumin Seeds and Mustard Seeds.
  2. Once they start spluttering, add the garlic and turmeric powder. 
  3. Add the potato and saute them on low for 5 min.
  4. Add the Beans and cook on low for 10 min.
  5. Veggies are moderately cooked, add the salt and black pepper. 
  6. Add the baby corn and stir fry on high for 5 min.
  7. Now add the Red chili Powder and Cilantro (Coriander) leaves. Cook until all the falvors sink into veggies.
  8. Turn off the Heat, Take into a serving bowl and Garnish with some more cilantro.

Now our Yummy Stiry Fry is ready!!!! Time to fill your little one's tummies with full of veggies.

Corn Cheese Toast

As Sweet Corn or Baby corn is Abhi's favorite vegetable, I try to include corn in as many dishes as possible and he enjoys too. Today I am featuring a recipe with corn which he enjoys as a morning breakfast or evening snack item. Here is the recipe for you...

Corn Cheese Toast

Ingredients:
Whole Wheat Bread Slices - 2
Butter - 1 tbsp
Sweet Corn - 1/2 cup ( frozen)
Shredded Cheese - 1/4 cup
black pepper - 1 tsp


Method:

  1. Heat the Non stick pan.
  2. Apply the butter on one side of the bread on two slices. Toast it lightly in the pan ( on the butter side down)
  3. Thaw the corn in microwave or thaw them by placing in the water for 5 min.
  4. Add 1 tsp crushed black pepper and shredded cheese to the corn and mix it well.
  5. Place this corn mixture in the bread slice and top with another slice. 
  6. Press gently and toast it on two sides on the pan.
  7. Take it out from the pan and cut diagonally and serve it after 5 min ( allow it to cool inside).


Sit back and enjoy while your kiddos snack on this item....Oh Yeah! That is what I did today... :-)

Belgian Hazelnut Spread and Weekly Breakfast Menu

I am one of those people who will be stand in the lines to try all the samples at the grocery stores looking for something new. Wait,wait, don't get me wrong. These 'sampler stalls' are very nice to get an idea of the product  with out buying and not to get disappoint after buying it when you don't end up liking it. As we are big fans of Costco, some times their samplers are huge enough to skip the breakfast. ;-) While I miss those days, here Hypercity comes to my rescue, when i saw 'sampler stalls' at this place. So One morning this Hazelnut spread got my eye, as I am not a huge fan of chocolate or sweets, reluctantly I have tried this sample hoping this chocolate spread does not taste like 'Chocolaty'. and No I did not, it is so Natural ( no artificial flavors) and it tasted so delicious. With out any thought it has been added to my grocery cart, and VJ gave me that looks which conveys, 'For People like me only the sampler stalls meant for. They make you try and make you buy' :-)


So Next day I want to see my buy in action, I spread this on the milk bread and served the kiddos, they simply loved it. That evening I heard Abhi talking to his friend saying ' My mom, got this spread you know, it is so yummy.. you should try this too... ' ( his exact words with his big eyes that expresses all his liking about this spread). Couldn't ask more when my kiddos love the new things that I always try and buy. :-)

Chobani Champions Greek Yogurt

When I was pregnant and in search of vegetable protein, Yogurt is one option which i can munch on with out complaining. One of my colleague suggested that this Chobani Grrek Yogurt has more proteins than the regular ones. I was able to find it in our Target store, i was surprised by looking at the nutrient info, it has fewer calories and double the protein (13g) than the regular ones. It tastes little bit like our Indian Yogurt (Curd) thick and sour. Then I hooked on to it.

But Recently when i was buying yogurts for kids, this Chobani Champions (their new line for kids) caught my eye. This is smaller than the adult size, but it has more proteins than the regular kids yogurt. They got two flavors so far, HoneyNana ( Honey and Banana) Flavor and Very Berry ( mixed triple berry) flavor. I have tried both the flavors for my kids, and now they are in love with. It's a yummy treat for their tummy and some peace and rest for their mommy! ;-)
